Galley Department

Executive Chef

Manages the purchasing, menu planning, preparation, and product inventory for the client account; trains and supervises kitchen staff; develops new products and recipes; and monitors overall product quality. Responsible for the entire galley staff, food planning, and quality control. Must demonstrate superior food preparation skills and have experience training and supervising food service employees. Three to five years of experience at the executive chef level, eight to ten years in a subordinate position on board, and/or hotel and restaurant experience are required. Very good English language skills are required. Culinary school education is required.

Salary range: 6000-9000 USD per month*

Assistant Executive Chef

Responsible for the day-to-day operations of the galley staff, assisting the executive chef with food planning, preparation, and quality control. Four to five years in a subordinate position on board and/or hotel and restaurant experience are required. Good English language skills are required. Culinary school education is required.

Salary range: 4500-6200 USD per month*

First Cook

Supervises second and third cooks, bakers, pastry cooks, and provisions. Food preparation and cooking responsibilities as directed by the Executive Chef. Two to three years in a subordinate position on board and/or hotel and restaurant experience are required. Good English language skills are required. Culinary school education is required.

Salary range: 3800–5100 USD per month*

Second Cook or Third Cook

Food preparation and cooking responsibilities, as directed by the First Cook, supervise bakers, pastry cooks, cleaners, and provisions. One or two years in a subordinate position on board and/or hotel and restaurant experience are required. Good English language skills are required. Culinary school education is required.

Salary range: 1900-2500 USD per month*

Cook Traineek

Food preparation and cooking responsibilities as directed by the first cook Prior hotel or restaurant experience is required. Culinary school education is required. Good English language skills are required.

Crew Cook /Crew Cook Assistant /Crew Cook Trainee

Food preparation and cooking responsibilities for the crew as directed by the first cook Prior hotel or restaurant experience is required. Culinary school education is required. Good knowledge of the English language is required.

Crew Cook Utility / Crew Messman

Cleaning and general maintenance as directed by the first cook Entry-level position; some experience in the position is required. Good English language skills are required.

Provision Master / Storekeeper

Responsible for the entire storage, ordering, and distribution of all food supplies as directed by the Executive Chef. A food and beverage background is essential; knowledge of accounting is required. Good English language skills are required.

Assistant Provision Master / Storekeeper

Responsible for the storage, ordering, and distribution of all food supplies as directed by the Provision Master or Storekeeper. A food and beverage background is essential; knowledge of accounting is required. Good English language skills are required.

Pastry Chef Supervisor

Responsible for the supervision of the pastry staff, oversees the development and preparation of all pastries. A culinary background of no less than three years of restaurant or hotel experience or prior experience in a subordinate position on board is required. Good English language skills are required.

Assistant Pastry Chef Supervisor

Responsible for the supervision of the pastry staff as directed by the pastry chef supervisor, oversees the development and preparation of all pastries. The pastry staff is responsible for creating and preparing all pastries as directed by the pastry chef supervisor. A culinary background of no less than two years of restaurant or hotel experience or prior experience in a subordinate position on board is required. Good English language skills are required.

Pastry Trainee

Pastry support staff are responsible for assisting in the preparation and cooking of all pastries as directed by the pastry chef supervisor. Cleaning and maintenance of pastry stations. A culinary background of no less than one year of restaurant or hotel experience or prior experience in a subordinate position on board is required. Good English language skills are required.

Salary range: 1600-2000 USD per month*

Baker Supervisor

Responsible for the supervision of the bakery staff. Controls the preparation and cooking of all bakery products. A culinary background of no less than three years of restaurant or hotel experience or prior experience in a subordinate position on board is required. Good English language skills are required.

Assistant Baker Supervisor

Responsible for the supervision of the baker staff as directed by the baker supervisor. Assists in the preparation and cooking of all bakery products.
